  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup fresh parsley, chopped
  • 3 cloves garlic, minced
  • 1/2 onion, finely chopped
  • 2 large eggs
  • 1/4 cup milk
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup garlic powder (for seasoning on top)
  • 1/4 cup additional grated Parmesan cheese (for topping)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare a baking sheet by lining it with parchment paper or lightly greasing a loaf pan.
  3. Mix the ground chicken, breadcrumbs, 1/2 cup grated Parmesan, mozzarella cheese, parsley, minced garlic, and chopped onion in a large mixing bowl.
  4. Whisk together the eggs, milk, Worcestershire sauce, Italian seasoning, salt, and black pepper until well combined in a separate bowl.
  5. Combine the egg mixture with the chicken mixture and mix gently until everything is well combined.
  6. Transfer the mixture onto the prepared baking sheet or into the loaf pan, shaping it into an even loaf.
  7. Add the garlic powder and additional 1/4 cup grated Parmesan cheese mixture on top of the meatloaf.
  8. Bake for 45-50 minutes, or until the internal temperature reaches 165°F (74°C).
  9. Remove from the oven and let it rest for 10 minutes before slicing.
  10. Serve warm with your favorite sides.

Notes

Don’t overmix the ingredients to keep the meatloaf tender. Feel free to customize the cheese according to your preference.
