Instructions

  1. Heat the Skillet: In a large skillet, heat olive oil over medium heat until shimmering.
  2. Prepare the Chicken: Season chicken breasts with salt and pepper, then add them to the heated skillet. Cook until browned and cooked through, about 6-7 minutes per side.
  3. Set Aside the Chicken: Remove the cooked chicken from the skillet and set aside on a plate, allowing it to rest while you prepare the rice.
  4. Sauté the Garlic: In the same skillet, add minced garlic and sauté until fragrant, about 1 minute.
  5. Add Chicken Broth: Stir in chicken broth and bring to a simmer, scraping the bottom of the skillet to incorporate flavorful bits.
  6. Mix in Rice and Cheese: Add rice and Parmesan cheese to the simmering broth, stirring well to combine.
  7. Combine and Cook: Place the chicken back in the skillet, cover, and simmer until the rice is cooked and has absorbed the liquid, about 15-20 minutes.
  8. Garnish and Serve: Finally, garnish with chopped parsley before serving.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. To reheat, warm in the microwave or stovetop with a splash of chicken broth.
