  • 4 pieces boneless, skinless chicken breasts
  • 1/2 cup crumbled feta cheese
  • 1/4 cup olive oil
  • 2 large lemons (juice)
  • 4 cloves garlic, minced
  • 1 tablespoon dried oregano
  • Salt and pepper, to taste
  • Fresh parsley, for garnish (Optional)

Instructions

  1. Combine the olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper in a mixing bowl to create the marinade.
  2. Place the chicken in a shallow dish or resealable bag and pour the marinade over, ensuring it’s well coated. Let it marinate for at least 30 minutes or up to 2 hours.
  3. Heat a large skillet over medium-high heat.
  4. Remove the chicken from the marinade (reserve the marinade) and sear it in the hot skillet for 5-6 minutes per side until golden brown.
  5. Pour the reserved marinade over the chicken, lower the heat, cover, and cook for an additional 10-15 minutes until the internal temperature reaches 165°F (75°C).
  6. Sprinkle the crumbled feta over the chicken in the last minute of cooking.
  7. Let the chicken rest for a few minutes before serving, garnished with fresh parsley.

Notes

For deeper flavor, marinate the chicken overnight. Serve with Greek salad, roasted vegetables, or tzatziki sauce.
