A vibrant and simple meal featuring chicken, chickpeas, and fresh vegetables, topped with a zesty olive oil and lemon dressing.

Ingredients

  • 1 pound chicken breast
  • 1 can chickpeas, drained and rinsed
  • 2 cups mixed greens
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 red onion, thinly sliced
  • 1/4 cup feta cheese (optional)
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook the chicken breast until fully cooked through, about 6–7 minutes per side. Remove from heat, slice into strips.
  2. Combine chickpeas, cherry tomatoes, cucumber, red onion, and feta in a bowl. Toss gently.
  3. Whisk together olive oil, lemon juice, dried oregano, salt, and pepper in a small bowl.
  4. Assemble bowls with a base of mixed greens, topped with the chickpea mixture and chicken strips.
  5. Drizzle the dressing over each bowl before serving.

Notes

Marinate chicken in olive oil, lemon, and oregano for extra flavor. Leftover rotisserie chicken can save time.
