  • 1/2 cup honey
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon zest
  • 1/2 cup pistachios, chopped and toasted
  • 2 tablespoons honey (for drizzling)

Instructions

  1. Preheat the Oven and Prepare the Pan: Preheat your oven to 350°F and line an 8×8-inch pan with parchment paper.
  2. Make the Crust: In a medium bowl, combine graham cracker crumbs, granulated sugar, and salt. Stir in the melted butter.
  3. Press the Crust: Press the crust mixture firmly into the prepared pan. Bake for 8-10 minutes until golden brown.
  4. Beat the Cream Cheese: In a large bowl, beat softened cream cheese with an electric mixer until smooth.
  5. Combine the Filling Ingredients: Add Greek yogurt, honey, eggs, vanilla extract, and lemon zest to the cream cheese. Mix until smooth.
  6. Pour and Smooth the Cheesecake Filling: Pour the cheesecake filling over the cooled crust and smooth it out.
  7. Bake the Cheesecake: Bake for 25-30 minutes until the edges are set but the center jiggles slightly.
  8. Cool and Chill: Let cool to room temperature, then refrigerate for at least 3 hours until firm.
  9. Drizzle and Garnish: Before serving, drizzle with honey and sprinkle chopped pistachios on top.

Notes

Store in an airtight container in the refrigerator for up to 5 days. Can be frozen for about 2 months.
