  • 1 pound ground beef or lamb
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 large egg
  • 1 lemon (juice and zest)
  • 2 tablespoons olive oil
  • 1 cup chicken or beef broth
  • 2 tablespoons cornstarch (optional for thickening)
  • 1/4 cup water (if using cornstarch)

Instructions

  1. Combine all ingredients for the meatballs in a large mixing bowl, mix well using your hands or a spoon until fully combined.
  2. Shape the mixture into meatballs, approximately 1 inch in diameter.
  3. Line a baking sheet with parchment paper and place the meatballs on it.
  4. Preheat the oven to 400°F (200°C).
  5. Bake the meatballs for about 20 minutes, or until browned and cooked through.
  6. Prepare the lemon sauce in a medium saucepan by heating olive oil over medium heat, then adding lemon juice, zest, and broth.
  7. Allow the sauce to come to a gentle simmer, taste and adjust seasoning.
  8. Continue cooking for a few more minutes until the sauce thickens to desired consistency.
  9. Transfer the baked meatballs to the saucepan with the lemon sauce and gently stir to coat.
  10. Let the meatballs simmer in the sauce for an additional 5 minutes.
  11. Serve the meatballs warm, garnished with extra parsley and lemon wedges if desired.
