Refreshing and nutritious Greek chicken bowls featuring grilled chicken, quinoa or rice, and fresh vegetables topped with tzatziki sauce.

Ingredients

  • 2 chicken breasts, grilled and sliced
  • 1 cup quinoa or rice, cooked
  • 1 cup cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1 cup bell peppers, diced
  • 1/2 cup tzatziki sauce
  • Olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Cook the quinoa or rice according to package instructions. Allow it to cool slightly.
  2. Grill the chicken breasts seasoned with salt, pepper, and olive oil for about 6-7 minutes per side. Let them rest before slicing.
  3. Prepare the fresh veggie mixture by combining cucumber, cherry tomatoes, red onion, and bell peppers. Drizzle with olive oil and season with salt and pepper.
  4. Assemble your bowls by starting with a base of quinoa or rice.
  5. Add slices of grilled chicken on top of the quinoa or rice.
  6. Finish with the fresh veggie mixture and a dollop of tzatziki sauce. Garnish with fresh parsley.

Notes

For added flavor, consider marinating the chicken before grilling. These bowls can be stored in an airtight container for up to 3 days.
