A delicious twist on classic comfort food, the Grilled Cheese Burrito combines the cheesy goodness of a grilled cheese sandwich with the heartiness of a burrito.

Ingredients

  • 2 large flour tortillas
  • 2 cups shredded cheese (cheddar, mozzarella, or a mix)
  • 1 cup cooked protein (chicken, beef, beans, or tofu)
  • 1/2 cup sautéed vegetables (bell peppers, onions, etc.)
  • Butter or cooking spray for grilling
  • Salsa or hot sauce (optional)

Instructions

  1. Heat the skillet over medium heat and add a little butter or cooking spray.
  2. Layer the first tortilla in the skillet and sprinkle half of the cheese over it.
  3. Add your choice of cooked protein and sautéed vegetables generously.
  4. Sprinkle the remaining cheese over the top.
  5. Assemble with the second tortilla on top, pressing down gently.
  6. Grill for about 3-4 minutes until the bottom is golden brown and the cheese melts.
  7. Flip the burrito carefully, cooking until the other side is golden and crispy.
  8. Slice it in half and serve with salsa or hot sauce, if desired.

Notes

Experiment with different cheeses and veggies for varied flavors. Store leftovers wrapped in foil or airtight containers for up to 3 days.
