Juicy marinated chicken thighs wrapped in pita with fresh veggies and tzatziki sauce, delivering the flavors of Greece right in your backyard.

Ingredients

Scale
  • 2 lbs boneless, skinless chicken thighs
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 34 cloves garlic, minced
  • 2 teaspoons dried oregano
  • 1 teaspoon ground cumin
  • Salt and pepper, to taste
  • Pita bread
  • Optional toppings: diced cucumber, chopped tomatoes, sliced red onion, feta cheese, and tzatziki sauce

Instructions

  1. Marinate the chicken: In a large mixing bowl, combine the olive oil, lemon juice, minced garlic, dried oregano, ground cumin, salt, and pepper. Add the chicken thighs and coat them evenly with the marinade. Cover and let it marinate in the fridge for at least 15 minutes.
  2. Preheat the grill: While the chicken is marinating, preheat your grill to medium-high heat. If using a grill pan, lightly grease it with olive oil.
  3. Grill the chicken: Once the grill is hot, place your marinated chicken thighs on it. Grill for about 5-7 minutes on each side or until cooked through (internal temperature of 165°F).
  4. Rest and slice the chicken: After grilling, transfer to a cutting board and let it rest for about 5 minutes before slicing into strips.
  5. Assemble your gyros: Take a warm pita bread, lay a generous helping of sliced chicken in the center, and add your choice of toppings.
  6. Drizzle with tzatziki: Finish by drizzling tzatziki sauce over the top, then roll or fold the pita to enjoy.

Notes

Store any leftovers in an airtight container in the refrigerator for up to 3 days. For extra flavor, consider marinating the chicken overnight.
