A delicious twist on the classic grilled cheese, featuring a blend of cheeses, deli meats, and roasted red peppers on buttery sourdough bread.

  • 4 slices of sourdough bread
  • 1 tablespoon of unsalted butter, softened
  • 2 cups of shredded mozzarella cheese
  • 1 cup of shredded provolone cheese
  • 1/2 cup of grated Parmesan cheese
  • 1/2 pound of thinly sliced deli meats (such as salami, capicola, or turkey)
  • 1/2 cup of roasted red peppers, sliced
  • 1/4 cup of mayonnaise
  • 1 tablespoon of Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients. Slice the sourdough bread into thick slices if not pre-sliced, and thinly slice the roasted red peppers.
  2. Combine the mozzarella, provolone, and Parmesan cheeses in a bowl. Mix well and set aside.
  3. Spread the mayonnaise evenly on one side of each slice of bread.
  4. Sprinkle the Italian seasoning over the mayonnaise.
  5. Build the cheese layer on the unspread side of two slices of bread, layering half of the cheese mixture evenly.
  6. Add a layer of your preferred deli meats over the cheese.
  7. Top the meats with a layer of sliced roasted red peppers.
  8. Finish with the remaining cheese mixture and place the other two slices of bread on top, with the mayonnaise side facing up.
  9. Preheat a skillet or griddle over medium heat.
  10. Cook the sandwiches for about 3-4 minutes until the bottom is golden brown and crispy.
  11. Flip the sandwiches with a spatula and cook for an additional 3-4 minutes until both sides are golden brown and the cheese is melted.
  12. Rest the sandwiches for a minute before slicing in half.
  13. Serve hot with your choice of dipping sauces, such as marinara or basil pesto.

Notes

For best texture, cook sandwiches just before serving and pair with a simple side salad or tomato soup.
