  • 2 medium zucchinis, sliced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • Salt and pepper, to taste
  • 1 teaspoon Italian seasoning
  • 2 tablespoons olive oil
  • Parmesan cheese for serving (optional)

Instructions

  1. Heat the olive oil in a large skillet over medium heat until shimmering.
  2. Add the diced onion and bell pepper, sautéing until soft and fragrant, about 3-4 minutes.
  3. Stir in the minced garlic and cook for another minute.
  4. Push the veggies to the side of the skillet and add the ground beef, cooking until browned and crumbly, about 5-7 minutes.
  5. Season the beef mixture with salt, pepper, and Italian seasoning.
  6. Add the sliced zucchini to the skillet, stirring to combine. Cook for about 5-7 minutes until tender.
  7. Stir everything together once more, adjusting seasoning as needed.
  8. Serve warm, topped with freshly grated Parmesan cheese if desired.
