  • 1 pound ground turkey
  • 1 cup orzo pasta
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 zucchini, diced
  • 1 can diced tomatoes (14.5 oz)
  • 2 cups chicken broth
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Brown the turkey in a large pot over medium heat until browned, about 5-7 minutes.
  2. Sauté the chopped onion and minced garlic together until softened, about 2-3 minutes.
  3. Add the diced bell pepper and zucchini, cooking for an additional 3-4 minutes.
  4. Stir in the orzo, diced tomatoes, chicken broth, Italian seasoning, salt, and pepper; mix well.
  5. Bring to a boil, then reduce to a simmer, cover, and cook for 10-12 minutes until orzo is tender, stirring occasionally.
  6. Garnish with fresh parsley before serving.
