  • 2 cups mixed vegetables (carrots, peas, corn)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups mashed potatoes
  • 1 cup chicken broth
  • 2 tablespoons olive oil
  • 1 teaspoon thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Sauté the onion and garlic in olive oil until softened, about 3-4 minutes.
  3. Brown the ground turkey with salt, pepper, and thyme.
  4. Mix in the vegetables and chicken broth, simmering for about 5 minutes.
  5. Transfer the turkey mixture to a baking dish.
