  • 1 pound ground turkey
  • 2 medium zucchinis
  • 1 tablespoon olive oil
  • 1/2 medium onion
  • 2 cloves garlic
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon crushed red pepper flakes
  • 1/4 cup chicken broth
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Sauté the chopped onion until soft and translucent, about 3-4 minutes.
  3. Add minced garlic and cook for another 30 seconds until fragrant.
  4. Brown the ground turkey for 6-8 minutes until fully cooked.
  5. Prepare the zucchinis by trimming the ends and slicing them into half-moon shapes.
  6. Stir in the sliced zucchini and cook for 4-5 minutes until slightly softened.
  7. Season with dried oregano, salt, black pepper, and crushed red pepper flakes.
  8. Pour in the chicken broth and stir to combine.
  9. Let it simmer on low heat for 3-4 minutes to meld the flavors.
  10. Add grated Parmesan cheese and stir until melted and combined.
  11. Taste and adjust seasoning if needed.
  12. Serve immediately, garnished with extra Parmesan if desired.
