  • 1 pound elbow macaroni
  • 1 cup mayonnaise
  • 1/4 cup sour cream
  • 2 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup diced red onion
  • 1/2 cup diced celery
  • 1/2 cup diced red bell pepper
  • 1/4 cup chopped fresh parsley

Instructions

  1. Boil the elbow macaroni in salted water until al dente. Drain and rinse under cold water to stop cooking and set aside.
  2. Whisk together mayonnaise, sour cream, Dijon mustard, apple cider vinegar, sugar, salt, and black pepper until smooth.
  3. Add the diced red onion, celery, red bell pepper, and parsley, stirring to coat evenly.
  4. Combine the cooled macaroni with the dressing and vegetables, mixing well.
  5. Chill in the refrigerator for at least 1 hour before serving to meld the flavors.
