  • 1 medium Onion, diced
  • 2 cloves Garlic, minced
  • 2 cups Frozen mixed vegetables (peas and carrots)
  • 4 cups Potato slices (fresh or frozen)
  • 1 can Cream of mushroom soup (Halal-friendly)
  • 2 cups Shredded cheese (e.g., cheddar)
  • Salt and pepper, to taste
  • 1 tablespoon Olive oil
  • 1 teaspoon Paprika

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add diced onions and minced garlic, sautéing for 3-4 minutes until onions are translucent.
  2. Add ground beef to the skillet, breaking it apart and cooking until browned and cooked through, about 5-7 minutes. Season with salt, pepper, and paprika.
  3. Toss in the frozen mixed vegetables and cook for an additional 3-4 minutes.
  4. Pour in the cream of mushroom soup, mixing until combined.
  5. Layer the potato slices evenly in a greased casserole dish.
  6. Top potato layer with the beef and vegetable mixture, spreading evenly.
  7. Sprinkle shredded cheese generously over the top.
  8. Bake in a preheated oven at 350°F (175°C) for 25 minutes covered with foil, then remove foil and bake for an additional 10-15 minutes until cheese is bubbly and golden brown.
  9. Let cool for a few minutes before serving.

Notes

For added crunch, sprinkle breadcrumbs mixed with Parmesan cheese on top before baking. Consider using ground turkey or a plant-based substitute for a healthier version.
