Warm and comforting, these enchiladas are made with shredded chicken and cheese, topped with enchilada sauce for a delicious, nutritious meal.

Ingredients

  • 2 cups cooked shredded chicken
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 can enchilada sauce
  • 8 small corn or flour tortillas
  • 1/2 cup diced onions (optional)
  • 1/2 cup black beans (optional)
  • 1 cup corn (optional)
  • Salt and pepper to taste
  • Chopped cilantro for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine the shredded chicken, half of the cheese, diced onions (if using), black beans (if using), corn (if using), and seasoning with salt and pepper. Mix well until everything is evenly distributed.
  3. Spread a small amount of enchilada sauce on the bottom of a baking dish to prevent sticking and add extra flavor.
  4. Take a tortilla, fill it generously with the chicken mixture, and roll it up tightly. Place the rolled tortilla seam side down in the baking dish.
  5. Repeat the process with the remaining tortillas, making sure to pack them snugly side by side in the baking dish.
  6. Pour the remaining enchilada sauce over the rolled tortillas, ensuring they are well coated. Sprinkle the remaining cheese on top for that melty finish.
  7. Bake the enchiladas in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  8. Once baked, remove the enchiladas from the oven and sprinkle with freshly chopped cilantro before serving.

Notes

For a lighter version, substitute Greek yogurt for sour cream when serving. Feel free to customize with your favorite vegetables or proteins.
