  • 1 lb chicken breast, diced
  • 1 cup quinoa or brown rice
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 red bell pepper, diced
  • 1 avocado, sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup Greek yogurt or sour cream
  • 1 tablespoon taco seasoning
  • Salt and pepper to taste
  • Lime wedges for serving
  • Fresh cilantro for garnish

Instructions

  1. Prepare the quinoa or brown rice according to package instructions.
  2. Sauté the diced chicken with taco seasoning, salt, and pepper in a skillet over medium heat until browned, about 5-7 minutes.
  3. Combine the cooked quinoa or rice, sautéed chicken, black beans, corn, and diced bell pepper in a large bowl.
  4. Assemble the bowls by scooping the mixture into bowls, then topping with sliced avocado, cherry tomatoes, Greek yogurt, and cilantro.
  5. Add lime juice over the top before serving.
