  • 2 cups all-purpose flour (sifted)
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ½ cup unsalted butter, softened
  • 2 large eggs (room temperature)
  • 1 teaspoon vanilla extract
  • ¾ cup milk (can substitute with almond milk)
  • 1 cup fresh blueberries (or thawed frozen blueberries)
  • 8 oz cream cheese, softened (mixed with ¼ cup of sugar)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Gather your ingredients ensuring butter and cream cheese are softened.
  3. Sift together the flour, baking powder, salt, and sugar in a mixing bowl.
  4. Beat the softened butter with sugar until light and fluffy.
  5. Add the eggs one at a time, mixing well after each addition, then stir in vanilla.
  6. Combine the sifted dry ingredients and milk alternately with the butter mixture.
  7. Fold in the blueberries gently.
  8. Mix the cream cheese with ¼ cup of sugar until smooth.
  9. Pour half of the batter into a greased loaf pan, then add the cream cheese mixture, and cover with the remaining batter.
  10. Bake for 50-60 minutes, until a toothpick comes out clean.
  11. Cool in the pan for 10 minutes before transferring to a rack to cool completely.

Notes

For best results, use room temperature ingredients. Feel free to substitute blueberries with other fruits or add nuts for texture.
