  • 1 whole turkey (1214 pounds)
  • 1/2 cup unsalted butter, softened
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 2 tablespoons fresh sage, chopped
  • Salt and pepper to taste
  • 2 cups chicken broth

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Create the herb butter mixture: Mix together the softened butter, olive oil, minced garlic, rosemary, thyme, sage, salt, and pepper.
  3. Prepare the turkey: Pat the turkey dry and loosen the skin over the breast and thighs.
  4. Apply the herb butter: Spread half under the skin and the remaining on the outside.
  5. Assemble for roasting: Place the turkey in a roasting pan and pour in the chicken broth.
  6. Roast the turkey for about 2-2.5 hours, or until the internal temperature reaches 165°F (74°C).
  7. Baste the turkey every 30 minutes with pan juices.
  8. Rest for 20 minutes before carving.
