A nutritious twist on classic banana bread, packed with protein and natural sweetness from ripe bananas.

Ingredients

  • 3 ripe bananas
  • 1/2 cup Greek yogurt
  • 2 eggs
  • 1/2 cup almond flour
  • 1/2 cup rolled oats
  • 1/2 cup protein powder
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/4 tsp salt

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. Mash the ripe bananas until smooth.
  3. Add Greek yogurt, eggs, and vanilla extract to the mashed bananas and mix well.
  4. Combine almond flour, rolled oats, protein powder, baking soda, cinnamon, and salt in another bowl.
  5. Merge the dry ingredients into the wet mixture and mix until just combined.
  6. Pour the batter into the greased loaf pan and smooth the top.
  7. Bake for 45-50 minutes, or until a toothpick inserted in the center comes out clean.
  8. Cool before slicing.

Notes

Store leftovers in an airtight container at room temperature for up to 3 days, or in the fridge for about a week. Freeze individual slices for up to 2 months.
