Ingredients

  • 2 cups cottage cheese
  • 2 cups rolled oats
  • 2 large eggs
  • 1 cup grated carrots (packed)
  • 1/4 cup honey
  • 1/4 cup raisins
  • 1 tsp cinnamon
  • 1/2 tsp ginger

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Blend the cottage cheese, eggs, honey, cinnamon, and ginger until smooth.
  3. Mix the rolled oats, grated carrots, and raisins in a bowl.
  4. Pour the blended mixture into the bowl with the dry ingredients and mix until just combined.
  5. Spread the mixture evenly into a greased baking pan.
  6. Bake for 35–40 minutes or until the top is golden and a toothpick comes out clean.

Notes

Serve warm with Greek yogurt or nut butter. Store in an airtight container in the fridge for up to five days or freeze for up to three months.
