Fluffy and nutritious egg white bites packed with vibrant veggies and feta cheese, perfect for breakfast or snack.

Ingredients

  • 1 cup egg whites (Approximately 810 egg whites)
  • 1/2 cup spinach, finely chopped
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup red bell pepper, diced
  • Salt and pepper, to taste
  • Garlic powder or herbs, optional

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix the egg whites in a mixing bowl until airy.
  3. Prepare the veggies by chopping the spinach and red bell pepper, then add to the egg whites with feta.
  4. Season the mixture with salt, pepper, and optional garlic powder or herbs.
  5. Grease a muffin tin lightly to prevent sticking.
  6. Fill each muffin cup with the egg mixture about 2/3 full.
  7. Bake for about 20 minutes or until golden and puffed.
  8. Cool for a few minutes before serving.
  9. Serve warm, optionally with salsa or hot sauce.

Notes

These bites can be stored in the fridge for up to 5 days or frozen for up to 3 months. Great for meal prep!
