  • 2 cups fresh spinach
  • 1 cup cream cheese
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 cup cooked rice or quinoa
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, heat olive oil over medium heat. Add chopped onion and cook until translucent.
  3. Add minced garlic and ground turkey to the skillet. Cook until the turkey is browned.
  4. Stir in fresh spinach until it wilts.
  5. Add cream cheese, Italian seasoning, salt, and pepper. Mix until combined.
  6. Fold in the cooked rice or quinoa until evenly distributed.
  7. Transfer the mixture to a greased casserole dish.
  8. Top with shredded cheese.
  9. Bake for 20-25 minutes, until the cheese is bubbly and golden.
