Delicious high protein pancake muffins, perfect for a nutritious breakfast on the go.

Ingredients

  • 1 cup cottage cheese
  • 3 large eggs
  • 1 scoop vanilla protein powder
  • ½ cup Greek yogurt
  • 1 cup whole wheat flour
  • 1 tsp baking powder
  • ½ tsp cinnamon
  • ¼ tsp salt
  • 1 tsp vanilla extract
  • Optional: blueberries or chocolate chips

Instructions

  1. Preheat your oven to 350°F. Lightly grease a muffin tin.
  2. Blend the cottage cheese and Greek yogurt until smooth.
  3. Whisk together the eggs, cottage cheese mixture, and vanilla extract.
  4. Mix the whole wheat flour, protein powder, baking powder, cinnamon, and salt in another bowl.
  5. Combine the wet and dry ingredients until just mixed.
  6. Add optional blueberries or chocolate chips if desired.
  7. Divide the batter into the muffin cups, filling them ¾ full.
  8. Bake for 20–25 minutes, until golden brown.
  9. Cool in the pan for 10 minutes before removing.

Notes

For added fluffiness, ensure your baking powder is fresh. Can substitute whole wheat flour with almond or gluten-free flour.
