Delicious mini muffins combining pancakes and sausage for a high-protein breakfast or snack.

  • 1 cup pancake mix
  • 1/2 cup milk
  • 2 eggs
  • 1 cup cooked sausage, crumbled
  • 1/2 cup Greek yogurt
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • Cooking spray

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a mini muffin tin with cooking spray to prevent sticking.
  2. Combine pancake mix, milk, eggs, crumbled sausage, Greek yogurt, maple syrup, and vanilla extract in a large bowl. Mix until just combined.
  3. Spoon the batter into the prepared mini muffin tin, filling each cup about 2/3 full.
  4. Bake in the preheated oven for 12-15 minutes or until golden brown and a toothpick comes out clean.
  5. Cool for a few minutes in the tin, then transfer to a wire rack.
  6. Store in the refrigerator or freeze for easy reheating.
