  • 1 lb ground sausage, browned and crumbled
  • 2 cups milk (try Fairlife for extra protein)
  • 2 eggs
  • ¼ cup maple syrup
  • 1 cup shredded cheese (cheddar or Colby jack)

Instructions

  1. Preheat your oven to 400°F (200°C). Spray a mini muffin tin well to ensure our muffins slide right out after baking.
  2. Whisk together the Kodiak pancake mix, milk, eggs, and maple syrup until smooth and well combined.
  3. Fold in the crumbled cooked sausage and shredded cheese gently, ensuring even distribution.
  4. Fill each muffin cup about three-quarters full with the prepared batter.
  5. Bake for 15 minutes or until the muffins are golden and firm to the touch.
  6. Let the muffins cool for a few minutes in the pan before transferring them to a wire rack.
