A quick and easy weeknight dinner featuring tender flank steak and vibrant vegetables tossed in a savory hoisin sauce over rice noodles.

  • 8 ounces rice noodles
  • 1 pound flank steak, thinly sliced
  • 2 tablespoons vegetable oil
  • 1 red bell pepper, sliced
  • 1 cup snap peas
  • 3 green onions, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1/4 cup hoisin sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste

Instructions

  1. Cook the noodles: Boil rice noodles according to package instructions. Once cooked, drain and set aside.
  2. Sear the beef: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the thinly sliced flank steak, season with salt and pepper, and stir-fry until browned. Remove from skillet and set aside.
  3. Stir-fry the veggies: Using the same skillet, heat the remaining tablespoon of oil. Sauté garlic and ginger for about 30 seconds until fragrant. Add the sliced bell pepper and snap peas, stir-frying until they’re tender-crisp.
  4. Add the sauce: Return the beef to the skillet. Stir in hoisin sauce, soy sauce, sesame oil, and red pepper flakes if you love a bit of heat. Toss to coat everything evenly in the luscious sauce.
  5. Combine with noodles: Add the cooked rice noodles and chopped green onions to the skillet. Toss everything together until heated through and well combined.
  6. Serve: Plate it up and enjoy this savory, satisfying noodle bowl hot!

Notes

For extra flavor, serve with toasted sesame seeds or a drizzle of chili oil. Pair with spring rolls or cucumber salad.
