Instructions
Preheat the oven to 425°F (220°C) to get it nice and hot for roasting our sweet potatoes to perfection.
Slice sweet potatoes into rounds and place them neatly on a baking sheet. Drizzle with olive oil, sprinkle with salt and pepper, and give them a gentle toss to coat.
Roast in the oven for about 20-25 minutes, or until tender and slightly caramelized.
Mix cooked chickpeas with honey and a pinch of salt in a bowl.
Top each sweet potato round with a generous helping of the honey chickpeas and sprinkle feta cheese on top.
