A comforting and easy one-pan dinner with smoky sausage, roasted sweet potatoes, and crisp broccoli, all enveloped in a delicious honey garlic sauce.

Ingredients

Scale
  • 14 ounces smoked sausage, sliced into ½-inch rounds
  • 2 large sweet potatoes, peeled and chopped into 1-inch cubes
  • 1 large head broccoli, cut into bite-sized florets
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • ¼ cup honey
  • ¼ cup low-sodium soy sauce
  • 4 cloves garlic, minced
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon cornstarch mixed with 1 tablespoon of water

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  2. Toss the sweet potato cubes with olive oil, salt, and pepper in a large bowl. Spread them on the prepared baking sheet.
  3. Roast the sweet potatoes for 15 minutes.
  4. Combine the honey, soy sauce, minced garlic, and apple cider vinegar in a small saucepan. Bring to a simmer over medium heat.
  5. Whisk in the cornstarch slurry and cook for 1-2 minutes until slightly thickened. Remove from heat.
  6. Add the sliced sausage and broccoli florets to the pan. Drizzle half of the honey garlic sauce over everything and toss gently to coat.
  7. Continue roasting for another 15-20 minutes until the sweet potatoes are fork-tender and the broccoli is crisp-tender.
  8. Drizzle the remaining sauce over the top, toss one last time, and serve immediately.

Notes
