  • 1 onion (chopped)
  • 3 cloves garlic (minced)
  • 1 inch ginger (grated)
  • 2 cups coconut milk
  • 2 tbsp curry powder
  • 1 tsp cumin
  • 1 tsp coriander
  • 1/2 tsp turmeric
  • 1/2 tsp chili powder
  • Salt and pepper (to taste)
  • 2 tbsp oil
  • Fresh cilantro (for garnish)

Instructions

  1. Heat the oil in a large skillet over medium heat until shimmering.
  2. Add the chopped onions, minced garlic, and grated ginger; sauté until the onions become translucent (3-5 minutes).
  3. Toss in the chicken pieces, stirring frequently until browned (5-7 minutes).
  4. Stir in the curry powder, cumin, coriander, turmeric, and chili powder; cook for 2-3 minutes.
  5. Pour in the coconut milk and bring to a gentle simmer.
  6. Reduce heat and let the curry simmer for about 20 minutes, until the chicken is cooked and tender.
  7. Season with salt and pepper to taste.
  8. Serve hot, garnished with fresh cilantro.

Notes
