  • 1 cup pineapple juice
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 1/4 cup ketchup
  • 2 cloves garlic, minced
  • 1 teaspoon ground ginger
  • 1/2 teaspoon black pepper
  • 2 green onions, chopped (for garnish)

Instructions

  1. Create the Flavorful Marinade: In a bowl, mix together the pineapple juice, soy sauce, brown sugar, ketchup, minced garlic, ground ginger, and black pepper to create a luscious marinade that will infuse your chicken with island-inspired flavors.
  2. Marinate the Chicken: Place the chicken thighs in a large zipper bag or a shallow dish and pour the marinade over them. Seal the bag or cover the dish and marinate in the refrigerator for at least 1 hour.
  3. Preheat the Grill: When you’re ready to grill, preheat your grill to medium-high heat.
  4. Grill the Chicken: Remove the chicken thighs from the marinade and place them on the grill. Cook for 6-7 minutes on each side or until the chicken is fully cooked.
  5. Brush with Remaining Marinade: During the last few minutes of grilling, brush the chicken with some of the reserved marinade.
  6. Garnish and Serve: Garnish with chopped green onions before serving.
