  • 2 cups mixed vegetables (bell peppers, broccoli, carrots)
  • 3 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 2 tablespoons chili paste
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste
  • Cooked rice for serving

Instructions

  1. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the sliced chicken breast to the hot skillet and sauté until golden brown and cooked through, about 5-7 minutes.
  3. Stir in the minced garlic and ginger and sauté for another minute.
  4. Introduce the mixed vegetables into the skillet and cook for about 3-4 minutes until tender yet crunchy.
  5. Mix together the soy sauce, rice vinegar, and chili paste in a separate bowl.
  6. Pour the sauce over the chicken and vegetables and stir to coat evenly.
  7. Cook for an additional 2-3 minutes until everything is heated through.
  8. Season with salt and pepper to taste.
  9. Spoon the Hunan Chicken mixture over a bed of cooked rice and serve.

Notes

For a quicker prep, use pre-sliced chicken and pre-cut vegetables. Feel free to add cashews or peanuts for an extra crunch.
