  • 1 teaspoon dried thyme

  • 2 tablespoons fresh parsley (chopped, for garnish)

Instructions

  1. Prepare the Ingredients: Start by gathering all your ingredients. Cut the beef into 1-inch pieces, dice the onion, slice the garlic, carrots, and celery.
  2. Sauté the Aromatics: In a large heavy pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Add the minced garlic and cook for an additional minute.
  3. Brown the Beef: Increase the heat to medium-high. Season the beef stew meat with salt and pepper, and add it to the pot. Brown the meat on all sides, about 5-7 minutes.
  4. Add the Vegetables: Toss in the sliced carrots and celery and stir to combine.
  5. Stir in the Tomatoes and Broth: Add the canned diced tomatoes and pour in the low sodium beef broth.
  6. Stir in Tomato Paste and Seasoning: Mix in the tomato paste and dried thyme, stirring well.
  7. Simmer the Stew: Reduce the heat to a gentle simmer, cover the pot and cook for 1.5 to 2 hours.
  8. Garnish and Serve: Taste and adjust seasoning if needed, garnish with freshly chopped parsley and serve.
