Ingredients

  • Chicken (whole or pieces)
  • Coconut milk
  • Onion
  • Garlic
  • Ginger
  • Soy sauce
  • Brown sugar
  • Turmeric
  • Cilantro
  • Lime juice
  • Salt
  • Pepper

Instructions

  1. Sauté Aromatics: In a large skillet, heat oil over medium heat. Sauté chopped onions, garlic, and ginger until softened.
  2. Brown the Chicken: Add chicken pieces and brown on all sides.
  3. Combine Ingredients: Stir in coconut milk, soy sauce, brown sugar, turmeric, salt, and pepper.
  4. Simmer to Perfection: Bring to a simmer, cover, and cook until chicken is tender and cooked through, about 30-40 minutes.
  5. Adjust & Brighten the Flavor: Adjust seasoning and stir in lime juice before serving.
  6. Garnish & Serve: Garnish with cilantro and serve with rice or noodles.
