Delightful strawberry cheesecake cookies that combine the classic cheesecake flavor in a soft, chewy cookie. Perfect for sharing or treating yourself!

Ingredients

Scale
  • 1 cup cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup chopped strawberries
  • 1/2 cup white chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a baking sheet by lining it with parchment paper.
  2. Cream the softened butter and cream cheese together until smooth and creamy.
  3. Add the granulated sugar, egg, and vanilla extract, and beat until fully combined.
  4. Whisk together the all-purpose flour, baking powder, and salt in a separate bowl.
  5. Gradually add the dry ingredients to the wet mixture, stirring gently until combined.
  6. Fold in the chopped strawberries and white chocolate chips until evenly distributed.
  7. Drop spoonfuls of the cookie dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake in the oven for 12-15 minutes, or until edges are lightly golden.
  9. Cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

To prevent strawberries from sinking, toss them in a tablespoon of flour before folding into dough. For chewier cookies, add an extra egg yolk or reduce flour slightly.
