  • 1/2 teaspoon baking powder

  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 cup grated carrots
  • 1/2 cup chopped walnuts (optional)
  • 4 oz softened cream cheese
  • 1/4 cup softened butter
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking pan.
  2. Combine in a mixing bowl the flour, baking powder, baking soda, cinnamon, and salt.
  3. Transfer the granulated sugar, brown sugar, vegetable oil, eggs, and vanilla into another bowl and beat until smooth.
  4. Gradually add the dry ingredients into the wet mixture, stirring gently until just combined.
  5. Fold in the grated carrots and walnuts (if using).
  6. Pour the batter into the prepared pan, spreading it evenly.
  7. Bake for 25-30 minutes until a toothpick inserted in the center comes out clean.
  8. Beat together cream cheese, butter, powdered sugar, and vanilla until smooth for frosting.
  9. Spread the frosting generously over the cooled bars, cut into squares, and serve.
