A simple and rewarding recipe for tender, slow-cooked chicken that is perfect for meal prep and family dinners.

  • 4 boneless, skinless chicken breasts (68 oz each)
  • 1/2 cup low-sodium chicken broth
  • 2 tbsp olive oil
  • 1 tsp kosher salt
  • 1/2 tsp onion powder
  • 1/2 tsp dried thyme
  • 1/2 tsp ground paprika
  • 1/4 tsp garlic powder
  • 1/4 tsp ground black pepper

Instructions

  1. Pour chicken broth into the bottom of your slow cooker.
  2. In a small bowl, combine the kosher salt, onion powder, thyme, paprika, garlic powder, and ground black pepper.
  3. Pat the chicken dry with paper towels and coat with olive oil and seasoning mix.
  4. Place the seasoned chicken breasts in a single layer in the slow cooker.
  5. Cook on LOW for 2.5 to 3.5 hours or HIGH for 1.5 to 2.5 hours.
  6. Let the chicken rest for 5-10 minutes before slicing or shredding.

Notes

For added richness, try using bone-in chicken thighs. Feel free to substitute fresh herbs if available.
