  • 2 tablespoons Olive oil
  • 2 tablespoons Fresh rosemary, minced
  • 2 tablespoons Fresh thyme, minced
  • 4 cloves Garlic, crushed or minced
  • 1 teaspoon Kosher salt
  • 1 teaspoon Freshly ground black pepper
  • 2 pieces Lemon wedges
  • 2 tablespoons Chopped parsley, for garnish

Instructions

  1. Preheat your oven to 425°F (220°C) to ensure a crisp and beautifully golden finish.
  2. Combine olive oil, minced rosemary, minced thyme, crushed garlic, kosher salt, and freshly ground black pepper in a mixing bowl. Mix into a fragrant paste, then massage it into the chicken thighs.
  3. Place the seasoned chicken thighs skin-side up on a roasting pan.
  4. Roast in the preheated oven for about 35-40 minutes until the skin is golden and crispy and the internal temperature reaches 165°F (74°C).
  5. Let the chicken rest for about 5 minutes, then squeeze lemon juice over the thighs, sprinkle with chopped parsley, and serve.

Notes

For crispier skin, pat the chicken dry before seasoning. Let the chicken sit at room temperature for about 30 minutes before cooking for even cooking.
