  • 2 cups cooked shredded chicken
  • 1 cup shredded cheddar cheese
  • 1 cup cooked, crumbled bacon
  • ½ cup ranch dressing (sugar-free for keto)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • 8 low-carb tortillas (almond flour or coconut flour)
  • Olive oil spray (for cooking)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine the shredded chicken, cheddar cheese, crumbled bacon, ranch dressing, garlic powder, onion powder, paprika, salt, and pepper in a large bowl.
  3. Lay a low-carb tortilla on a flat surface and place about ¼ cup of the chicken mixture on one side.
  4. Roll the tortilla tightly, folding in the sides as you go.
  5. Repeat this process with the remaining tortillas and filling.
  6. Place the taquitos seam-side down on a baking sheet lined with parchment paper.
  7. Spray the tops of the taquitos lightly with olive oil.
  8. Bake for 15-20 minutes, or until golden brown and crispy.
  9. Remove from the oven and let them cool for a few minutes before serving.

Notes

Serve with guacamole or salsa for added flavor. Leftovers can be stored in the fridge for up to 3 days.
