A delicious low-carb twist on the classic quesadilla, filled with seasoned chicken and gooey cheese.

Ingredients

  • 2 large low-carb tortillas
  • 1 cup cooked chicken, shredded
  • 1 cup shredded cheese (cheddar, mozzarella, or your choice)
  • 1 tablespoon olive oil
  • 1 teaspoon taco seasoning
  • Salt and pepper to taste
  • Sour cream for serving (optional)
  • Salsa for serving (optional)

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Mix the shredded chicken with taco seasoning, salt, and pepper.
  3. Place one tortilla in the skillet.
  4. Sprinkle half of the cheese on one half of the tortilla, add seasoned chicken, and then add the remaining cheese.
  5. Fold the tortilla over and cook until golden brown.
  6. Repeat with the second tortilla.
  7. Slice into wedges and serve with sour cream and salsa.

Notes

Use rotisserie chicken for a quicker meal. Experiment with different cheeses for a flavor twist.
