Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper.
  3. Arrange the saltine crackers in a single layer on the prepared baking sheet.
  4. Melt the unsalted butter in a medium saucepan over medium heat.
  5. Add the erythritol and stir until combined; let it come to a gentle boil.
  6. Boil the mixture for 3 minutes without stirring.
  7. Pour the mixture evenly over the saltine crackers.
  8. Bake for 5-7 minutes until bubbly and golden.
  9. Sprinkle the sugar-free chocolate chips evenly over the hot toffee layer and let them melt.
  10. Spread the melted chocolate evenly across the toffee layer.
