A comforting Keto version of the classic shepherd’s pie featuring a creamy cauliflower topping and a hearty filling of ground beef or lamb with vegetables.

Ingredients

  • 1 lb ground beef or lamb
  • 1 cup carrots, diced
  • 1 cup peas
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup beef broth
  • 2 tablespoons tomato paste
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • Salt and pepper to taste
  • 1 head of cauliflower, cut into florets
  • 4 tablespoons butter
  • 1/2 cup heavy cream

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Brown the ground meat over medium heat and add onion and garlic; sauté until fragrant.
  3. Mix in the diced carrots and peas, then add beef broth, tomato paste, thyme, rosemary, salt, and pepper; simmer for about 10 minutes.
  4. Prepare the cauliflower florets by steaming them until tender, then drain.
  5. Blend the steamed cauliflower, butter, and heavy cream until smooth.
  6. Assemble the dish by spreading the meat mixture in a baking dish and topping it with the cauliflower mash.
  7. Bake for 20-25 minutes until the top is golden and slightly crispy.
  8. Cool slightly before serving.

Notes

Serve with fresh green salad or steamed broccoli. Can store in the fridge for up to 3 days or freeze for up to 3 months.
