A bright, zesty dish that bursts with flavor and freshness, perfect for any occasion.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 2 lemons (juice and zest)
  • 2 tablespoons olive oil
  • 2 garlic cloves, minced
  • 1 tablespoon fresh thyme (or 1 teaspoon dried thyme)
  • 1 tablespoon fresh rosemary (or 1 teaspoon dried rosemary)
  • Salt and pepper to taste

Instructions

  1. Mix the Zesty Marinade: In a bowl, mix lemon juice, lemon zest, olive oil, garlic, thyme, rosemary, salt, and pepper.
  2. Marinate the Chicken: Place chicken breasts in a resealable bag or shallow dish and pour the marinade over. Seal the bag or cover the dish and refrigerate for at least 30 minutes (up to 4 hours).
  3. Preheat the Grill: Preheat the grill to medium-high heat.
  4. Prepare for Grilling: Remove chicken from marinade and discard the marinade.
  5. Grill to Perfection: Grill chicken for 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C).
  6. Rest and Serve: Let the chicken rest for a few minutes before slicing and serving.

Notes

For best results, marinate the chicken longer for enhanced flavor and do not skip the resting period after grilling.
