Ingredients

  • 200g wholegrain spaghetti
  • 2 salmon fillets
  • 1 cup asparagus, chopped
  • 1 cup kale, chopped
  • 1 cup peas (fresh or frozen)
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 lemon (zest and juice)
  • Salt and pepper to taste
  • Parmesan cheese for serving (optional)

Instructions

  1. Cook the Spaghetti: Cook wholegrain spaghetti according to package instructions; drain and set aside.
  2. Infuse the Olive Oil: In a large skillet, heat olive oil over medium heat. Add garlic and cook until fragrant.
  3. Sear the Salmon: Add the salmon fillets and cook for about 5 minutes on each side or until cooked through. Remove salmon from the skillet and flake into pieces.
  4. Sauté the Vegetables: In the same skillet, add asparagus, kale, and peas. Sauté for 3-4 minutes until the vegetables are tender.
  5. Combine Ingredients: Stir in the cooked spaghetti and the flaked salmon. Add lemon zest, lemon juice, salt, and pepper. Mix well to combine.
  6. Serve and Enjoy: Serve hot, topped with Parmesan cheese if desired.

Notes

Perfectly cooked salmon should flake easily but still be slightly moist. Store leftovers in an airtight container for up to 2 days.
