A quick and flavorful dish that features wholegrain spaghetti, flaky salmon, and vibrant vegetables, all brightened with fresh lemon.

Ingredients

  • 200g wholegrain spaghetti
  • 2 salmon fillets
  • 1 cup asparagus, trimmed and cut into pieces
  • 1 cup kale, chopped
  • 1 cup peas (fresh or frozen)
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Zest and juice of 1 lemon
  • Salt and pepper to taste
  • Parmesan cheese for serving (optional)

Instructions

  1. Cook the spaghetti according to the package instructions. Once al dente, drain and set aside.
  2. Sauté the garlic in olive oil over medium heat until fragrant, about 1-2 minutes.
  3. Add the asparagus pieces and cook for about 3 minutes until slightly tender.
  4. Incorporate the chopped kale and peas, cooking until the kale wilts and peas are heated through.
  5. Season the mixture with salt, pepper, lemon zest, and lemon juice, then add the cooked spaghetti and toss.
  6. Prepare the salmon in a separate pan over medium flame, cooking until flaky, about 4-5 minutes per side.
  7. Final assembly: serve the spaghetti topped with the salmon and a sprinkle of Parmesan cheese, if desired.

Notes
