A comforting, fragrant roast chicken infused with zesty lemon and fresh thyme, perfect for family gatherings.

Ingredients

  • 1 whole chicken (about 45 lbs)
  • 2 lemons, halved
  • 45 sprigs of fresh thyme
  • 4 cloves of garlic, smashed
  • 3 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Rub the chicken with olive oil and season generously with salt and pepper, including inside the cavity.
  3. Stuff the cavity of the chicken with the lemon halves, thyme sprigs, and smashed garlic.
  4. Place the chicken in a roasting pan and roast for about 75 minutes, or until the internal temperature reaches 165°F (74°C).
  5. Let the chicken rest for 10-15 minutes before carving.
  6. Carve the chicken and serve with the luscious pan juices.

Notes

Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently in the oven.
