A comforting and nutritious Lentil Soup that’s easy to make and perfect for chilly days.

Ingredients

  • 1 cup lentils
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 can diced tomatoes
  • 2 teaspoons cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley for garnish

Instructions

  1. Rinse the lentils under cold water and set them aside.
  2. Heat the olive oil in a large pot over medium heat.
  3. Sauté the chopped onion, diced carrots, and diced celery until soft and fragrant, about 5 minutes.
  4. Toss in the minced garlic, cumin, and paprika. Cook for another minute.
  5. Add the lentils, vegetable broth, and diced tomatoes to the pot.
  6. Bring the soup to a gentle boil, then reduce the heat to low and simmer for 25-30 minutes.
  7. Season with salt and pepper to taste once the lentils are tender.
  8. Serve hot, garnished with fresh parsley.

Notes

For extra depth of flavor, consider adding a bay leaf during simmering. Substitute with dried herbs or adjust spices to your liking!
