  • 2 celery stalks, diced
  • 4 cups vegetable broth
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 bay leaf

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion, minced garlic, diced carrots, celery, and bell pepper. Sauté for about 5-7 minutes until softened.
  3. Stir in the lentils along with cumin, paprika, salt, and pepper, allowing the flavors to mingle.
  4. Pour in the vegetable broth and toss in the bay leaf.
  5. Bring to a boil, then reduce heat and simmer for about 30-40 minutes until lentils are tender.
  6. Remove the bay leaf and taste the stew, adjusting seasoning if necessary.
  7. Ladle the stew into bowls and serve warm.
