  • 1 lb Ground meat (beef, turkey, or chicken)
  • 2 tbsp Olive oil
  • 1 packet Taco seasoning
  • 1 can Black beans, drained
  • 1 cup Corn
  • 1 cup Cheese (cheddar or Mexican blend)
  • 1 cup Sour cream
  • 1/2 cup Sliced jalapeños
  • 1/4 cup Chopped cilantro
  • 1 Lime (for serving)

Instructions

  1. Prepare the potatoes by peeling and dicing them. Boil in salted water until tender, about 10-15 minutes, then drain and set aside.
  2. Brown the ground meat in a skillet with olive oil over medium heat, breaking it up as it cooks. Add taco seasoning and mix well.
  3. Combine the cooked potatoes, browned meat, black beans, corn, and cheese in a bowl, gently tossing to mix.
  4. Assemble the bowls by dividing the mixture and topping with sour cream, jalapeños, and cilantro. Serve with lime wedges.
